last year, when i was in florence, my roommate julia made a fabulous ratatouille.  she made it in the morning, planning on heating it up before dinner.  unfortunately, come suppertime, the gas for the stove had run out. so she placed the pot on top of the gas space heater so it could warm up–it took about 2 hours!  despite this set back, we had a delicious feast and i added another recipe to my repertoire.  it’s a perfect meal for a chilly night (not that tonight was) and is super easy to make.


1. chop up a large onion and 4 cloves of garlic. sauté until golden.

2. while the garlic and onion are doing their thing, chop up 2 zucchini, 2 peppers, half an eggplant.  and tonight i added some small red potatoes for fun.

3. toss in the pot and let them cook for a minute or so.  then add 2 16oz. cans of diced tomatoes.  season with salt, pepper and a few bay leaves.

4. although it’s great alone, i like it over polenta. slice 1/2 inch slabs, place on tray with some olive oil and put in the oven at 450° for 10 minutes or so.

5. spoon over the polenta and sprinkle with some parmesan cheese.

yum. yum. yum.
