i’ll let you in on a little secret recipe: roasted lemons.
ridiculously easy. and unbelievably delicious.
turn the oven to 425°.
slice lemons about 1cm thick.
line the bottom of the pan with olive oil and sliced lemons.
layer with fish and veggies (really, you can use whatever strikes your fancy).
sprinkle with salt and pepper.
pop in the oven.
wait 20-30 minutes.
and voila—dinner is served.
the first variation i tried was with salmon and rosemary. and it quickly became a staple in my repertoire.
the other night i decided to make things easier and throw everything in the same pan. and it proved to be a phenomenal idea. i lined the bottom of the pan completely with lemons along with about 8 minced garlic cloves. then the tilapia and the veggies on top. sprinkled a bit more olive oil, garlic and salt and pepper. and a few lemons slices on top.
seriously, one of the most spectacular things i’ve ever pulled out of an oven.
i highly recommend trying this or some variation. (i’ve also done tilapia with orange).
